Happy Sunday, friends! It’s currently just after lunchtime here in Georgia on a particularly gloomy and cold day, and I have not yet gotten out of my PJ’s, and frankly, I don’t plan on getting out of them at this point! I’ve had such a wonderful lazy Sunday and I’ve spent it meal prepping! I haven’t meal prepped [healthy food] in weeks and I’ve desperately needed to get back into it, especially now that I’m back at the gym. This week, I decided to keep it particularly simple. (By the way, I finally got my iPhone and I’m so excited for how much better my pictures are going to look for the blog)
For this week I wanted it to be very protein-and-veggie-heavy, with a little carb. I decided to kick it back to my old days of meal prep with some Italian-seasoned chicken (this time not frozen), Italian-seasoned green beans, and Parmesan-rosemary sweet potatoes drizzled in Italian herb olive oil. I think I’m starting to notice a pattern with my seasoning…
For the chicken, I sliced a pound of breasts in half and rubbed them with the olive oil before sprinkling a generous dose of Italian seasoning, garlic powder, onion powder, salt, and pepper. I placed them in a greased pan, covered with foil, and baked at 380 for 25 minutes, an extra 10 minutes uncovered.
Next, the potatoes. I sliced a sweet potato, drizzled them in the same oil, and then sprinkled some rosemary and Parmesan cheese on top. My mom wanted some plain so I left those untouched. These were a little tricky to bake at 380, so after 25 minutes of them still being soft, I turned the temperature up to 400 for an extra 10 minutes, and some of them got charred and burnt. Oh well, I’ll try again with those.
I got hungry while I was waiting for the potatoes to cook, so I decided to make myself a salad from a recipe that I got from the blog of the great Taralynn McNitt. I’ve been following her blog on and off since I found her in 2011 when I was desperate for weight loss tips. She posts amazing recipes and workouts, and her dogs are so adorable. I highly recommend giving her blog a glance, you won’t be disappointed! Anyway, the salad.
I chopped a head of romaine hearts, diced an avocado, chopped some grape tomatoes, and made a four ingredient dressing. I took some olive oil, half regular, half herb flavored, two drops of balsamic (which I got at a nice spice shop in Hendersonville, NC), Parmesan cheese, and all purpose seasoning. I added some extra Parmesan cheese once it was all mixed together. Overall, this salad was so yummy and I can’t wait to make it again, this time adding some chicken on top!
Last but not least, the green beans. I forgot to get a picture of them cooking, which makes me glad I’m not a food blogger, but I just cooked a bag of frozen green beans in some water and seasoned them with salt and pepper, garlic powder and onion powder.
Overall, I’m very pleased with how everything turned out. I’ll keep experimenting with the potatoes, but they still taste amazing! It’s going to be great having my lunches all ready to go for work this week, and hopefully this will keep me from almost passing out at the gym. My goal is to go every night this week. It may not happen, but it’s good to have goals!
