Happy Sunday once again, friends! I found a recipe last week that was veeeery successful, and I just wanted to share what I made with you all! This week, I actually took the time to take pictures of all the steps, and I changed up how I cooked the sweet potatoes so it cut labor time in HALF. So without further ado, here’s the recipe!

Veggie and Bean Stuffed Sweet Potatoes


2-3 sweet potatoes

1 head of broccoli

half a zucchini, chopped

half a red pepper, chopped

half a red onion, minced

3 stalks of green onion, chopped

1 can black beans

1/2 tsp salt & pepper

1/2 tsp garlic powder

colby jack cheese

First, I took my mom’s advice to microwave the potatoes for the first ten minutes instead of just baking them. Guess what? It cut my labor time in HALF. What took my three hours last week took me a little more than an hour tonight, I felt so empowered! I know that’s silly, but I love finding life hacks like that that make life easier.

A cider for the chef, some “liquid motivation,” if you will

So I microwaved the potatoes for ten minutes, and then I very CAREFULLY transferred them to sheets of foil, wrapped them, and stuck them in a 405 degree oven to bake for an additional 15 minutes.

While the potatoes were cooking, I chopped all my vegetables and got them started in the skillet. I sauteed the onions first, then the other vegetables.

Once the vegetables got soft, I tossed the black beans in (after draining and rinsing) and let them cook for just a few minutes until the potatoes were done.

When the potatoes were done, I brought them out and carefully filled them with the veggie mixture.

Then, as to be expected with myself and my taste for these kinds of recipes, I smothered the sucker in CHEESE.

Then, I stuck the potatoes BACK in the oven for one last baking session, for 8 more minutes, to let the cheese melt and make absolutely sure the veggies were soft and cooked. While those potatoes were cooking, I took the rest of the veggie filling and some of the potato mash, topped it with cheese, and ate it by itself!

Seriously guys, this recipe is so delicious. I made this last week with chicken, and I couldn’t even finish my chicken because these potatoes are so filling! I highly recommend this recipe, I found it on bodybuilding.com. I’m so happy I found this, and I plan on making it until I get tired of it!
